I don’t know about everyone else, but I love the holiday season. You know what else happens this time of year-cold weather, comfort food and cashmere sweaters. Speaking of food and weather…There is nothing like a hot bowl of chili, to warm you up, after a cold day. Instead of the same ole’ chili you always tend make, you should mix-it-up, add a little diversity to your family’s dinner table. Luckily, I have the perfect (Crock-Pot)recipe, tested and approved by the pickiest eater-MY HUSBAND.The first time I made this chili he was reluctant to give it a try, because he doesn’t like tomatoes and it was “different”. He didn’t remain reluctant for too long. Not only did he have the chili for dinner, he took a HUGE bowl of it to work the next day. I decided it was safe to add this recipe to our normal dinner rotation, at least during the cooler months. So, if you want an easy-to-make and easy-to-please recipe try this one out!!!!! {The Ingredients}
-1 (15 oz) can Black Beans
-1 (15.25 oz)can Whole Kernel Corn, undrained
-1 can Rotel, undrained (Original)
-1 package Buttermilk Ranch Dressing Mix
-1 tsp Cumin
-1 Tbsp Chili Powder
-1 tsp Onion Powder
-8 oz Package light Cream Cheese (1 package)
-2 or 3 Chicken Breasts
{The Directions}
◊Prep: 5 mins ◊Cook: 6-8 hours ◊Servings: 4-5
- Drain and rinse the black beans.
- Place the chicken at the bottom of pot, then pour the entire can of corn (undrained), rotel and black beans on top of the chicken.
- Top (ingredients above) with the seasonings (cumin, onion power, chili powder) and ranch mix. Stir thoroughly.
- Place the cream cheese on top, cover and cook on low for 6-8 hours.
- Lastly, stir the cream cheese into the chili and use 2 forks to shred the chicken. Mix everything together. {Note: The chicken, if cooked all the way through, should shred (easily) without having to use a knife.)
- Serve and ENJOY!
